肉味噌を使った【麻婆豆腐】

[Mabo tofu] using meat miso

material:

Meat miso 90g

1 piece silken tofu

1 long green onion

A little sesame oil for frying

Bean sauce 15g

Cooking sake 20g

Sweet noodle sauce 20g

100cc of water

Appropriate amount of potato starch dissolved in water

Sesame oil for fragrance 5g

How to make:

  1. Halve a green onion, separate the top green part from the bottom white part, and chop finely.
  2. Heat an appropriate amount of sesame oil for stir-frying in a frying pan, stir-fry the green part of the long onion over medium-low heat until a fragrant aroma emerges, then add the bean sauce and lightly stir-fry over low heat.
  3. Add cooking sake, sweet noodle sauce, and water, bring to a boil, then add meat miso and thicken with water-soluble potato starch.
  4. Gently heat the diced tofu in boiling water for about 2 minutes / Parboiling will give the tofu a fluffy texture /
  5. Drain the tofu in a colander, then add to step 3 and mix gently.
  6. Add sesame oil for aroma, top with chopped green onion and serve.
